To Start A Restaurant
I knew that it would be a lot of work to start a restaurant, but I didn't realize quite how much work. You see, starting a restaurant had been one of my lifelong dreams. I had most of the skills needed to do it. I was an excellent cook, good with people, excellent with machinery, and organized. The one thing I didn't have, however, was business sense. This is a pretty serious shortcoming when you want to start a restaurant. Starting a restaurant, you see, requires a great business plan. There are plenty of restaurants that serve good food out there. That is not the hard part. The hard part is getting recognition, getting financing, and making profits. The product margin in the food service industry is notoriously thin. You can make money – and a lot of money – if you know how to do it, but it is no picnic. You need to know what you are doing from day one. One of the most important things is your food supply chain. You need to make sure that every stage of it is set up perfectly. I didn't really know about this when I first decided to start a restaurant. I was pretty inefficient with supplies and, as a result, I lost a lot of money that I didn't have to. I did not know that you could – for example – reuse it to make sauce, or cook slightly wilted vegetables when they were no longer quite fit for salad. You don't ever use bad food – that is not part of the game plan – but if you are careful you can make your fresh food last longer than it would otherwise. One of the most important things to consider when starting a restaurant is how to find the best people for your staff. A lot of people who want to start a restaurant simply go out in the community and post ads. Although you can stumble upon some good cooks – particularly if you live in a pretty settled urban area – it is better if you have some connections in the business. Having a hand-picked kitchen manager who is loyal to your project will make things easier for you. They will have a stake in how things go, and as a result they will be more willing to give it their all. This makes all the difference – particularly when you're just starting your business.
